It is 8:40 on a Friday night. The pass is full, three racks are queued at the dishwasher and a stockpot is waiting to be tipped. Then the floor drain by the pot wash starts to gurgle. What a restaurant grease trap catches during one service

A grease trap slows the water down. Fat and oil float to the top, food solids sink to the bottom, and cleaner water flows out through the middle to the sewer. The trap holds the fat and sludge until someone pumps it out. It does not destroy anything. It stores it.

The fat that arrives hot and leaves as a solid

Hot water carries fat through your pipes as a liquid. Once it reaches the trap and cools, it sets. Tip a pan of roast juices down the sink at 8pm and it is a floating layer by 9pm. Catching that fat is the trap's job. But every litre that lands there fills space you have already paid to have cleared.

The scrapings that never made it to the bin

Solids matter as much as fat. Plate scrapings, rice, sauce residue and coffee grounds settle into sludge. When a trap is mostly sludge, the fat has less room to separate, so more grease passes downstream. That is why the bin and the sink strainer do real work for the trap.

Why your trap fills fastest on your best days

A quiet Tuesday and a packed Saturday do not load the trap equally. The busy day sends more plates, more pots and more hot water through it. The water moves faster too, and fast flow gives fat less time to separate.

Two habits that cut the load on a busy night

Scrape plates and pans into the bin before they reach the sink. Wipe heavy grease off pans with paper first. Neither step costs money, and both keep fat and solids out of the trap. Hot water from the dishwasher does not solve the problem. It only carries the fat further down the line before it sets.

Time the clean around your week, not just the calendar

Most operators book a clean when something goes wrong. A better rule is to book it so the trap is empty going into your biggest stretch of trading.

Here is a worked example. Say your restaurant is flat Monday to Wednesday, steady on Thursday and heavy Friday to Sunday. A clean on Tuesday morning gives you an empty trap for the whole run of busy nights. A clean on Sunday night, after the last plate, does the same job and lets the cleaner work without disturbing service. Friday afternoon is the worst slot. The trap is already near the top, and you are about to push the heaviest load of the week through it.
